lutein

Egg yolk colorant

Lutein is a yellow pigment found in egg yolks, leafy greens, and other plants.

It belongs to a class of compounds called carotenoids.

In humans, lutein concentrates in the eye, where it helps filter harmful blue light and may protect against age-related macular degeneration: Spinach and kale are rich in lutein.
