curry paste
Thai cooking base
Curry paste is a thick, concentrated blend of spices, herbs, chilies, and aromatics used as a base for curries and other dishes.
Thai curry pastes—red, green, and yellow—are the most familiar in Western kitchens, though Indian and Southeast Asian cuisines have their own versions.
Unlike dry curry powder, the paste form incorporates wet ingredients like lemongrass, galangal, and shrimp paste: Stir a tablespoon of curry paste into the coconut milk.
