concaveness

Bowl-like surface quality

Concaveness is the quality of curving inward, like the inside of a bowl or a spoon's scooping surface.

The term is interchangeable with concavity, though concavity appears more often in technical contexts: The concaveness of the lens focuses light to a single point.
