Leafy Chinese vegetable
Choy is a leafy Asian vegetable, appearing almost exclusively in compound names: bok choy, choy sum, yu choy.
These are varieties of Chinese cabbage with crisp stalks and tender leaves, common in stir-fries and soups.
On its own, choy is the Cantonese word for vegetable.
