escarole

Broad-leafed chicory

Escarole is a variety of endive with broad, slightly bitter leaves, used in salads and cooked dishes.

The outer leaves are darker and more pungent; the pale inner leaves are milder.

It appears often in Italian cooking, especially in soups: escarole and white bean soup.
