ceviches

Lime-cooked seafood dishes

Ceviches is the plural of ceviche, a Latin American dish of raw fish or seafood cured in citrus juice—typically lime or lemon.

The acid denatures the proteins, giving the fish a cooked texture without heat.

Regional variations abound: Peruvian ceviche often includes sliced onion and ají pepper, while Mexican versions may add tomato and avocado.

We ordered three different ceviches to share.
