barrel-aging

Oak vessel conditioning

Barrel-aging is the process of storing beverages in wooden barrels to develop flavor, color, and complexity over time.

The wood—usually oak—imparts notes of vanilla, caramel, or smoke while allowing slow oxidation.

Wine, whiskey, and beer are commonly barrel-aged: This bourbon was barrel-aged for twelve years.

Some producers now barrel-age cocktails, hot sauce, and even coffee.
