cellaring

Basement beverage storage

Cellaring is the practice of storing wine, beer, or other beverages in a cellar or similar cool, dark environment to age them.

The term appears most often among craft beer enthusiasts who cellar high-alcohol or barrel-aged beers: I've been cellaring this imperial stout for three years.

The goal is typically to let flavors develop, mellow, or integrate over time.
