salt cure
Dry mineral preservation
Salt cure is a method of preserving food, especially meat or fish, by packing it in salt or soaking it in brine.
The salt draws out moisture and inhibits bacterial growth, allowing the food to be stored without refrigeration.
As a verb, to salt-cure is to preserve something this way: salt-cured ham, salt-cured cod.
The technique predates modern refrigeration by thousands of years.
