Adobo

Vinegar-braised meat dish

Adobo names two distinct culinary traditions.

In Filipino cooking, adobo is a dish of meat—usually chicken or pork—braised in vinegar, soy sauce, garlic, and peppercorns: We're having chicken adobo for dinner.

In Spanish and Latin American cooking, adobo is a sauce or marinade made from chiles, vinegar, and spices, used to season meat or as a base for stews.

Chipotle peppers often come packed in adobo.
