tannin

Wine's pucker source

Tannin is an astringent compound found in plants, especially in bark, leaves, and unripe fruit.

Tannins give tea its bitter edge and red wine its dry, puckering mouthfeel.

In winemaking and leather tanning, tannins are central: they bind to proteins, which is why tannic wines pair well with rich meats and why oak bark can turn animal hide into leather.
