shankbone

Lower leg bone

A shankbone is the tibia or shinbone—the main bone of the lower leg between knee and ankle.

In culinary contexts, it refers to the bone from the lower leg of an animal, often used for soup stock or served with meat attached: lamb shankbone, beef shankbone braised until tender.

A roasted shankbone appears on the Passover seder plate as a symbolic element.
