romesco

Spanish pepper sauce

Romesco is a Spanish sauce originating from Catalonia, made with roasted tomatoes, red peppers, garlic, almonds or hazelnuts, and olive oil, often thickened with bread.

It traditionally accompanies grilled seafood, especially calcots (spring onions), but pairs well with vegetables, meats, or as a dip: We served the grilled shrimp with romesco.
