nitrosamine
Cancer-causing chemical
Nitrosamines are chemical compounds formed when nitrites react with amines, typically during high-heat cooking or digestion.
Many are potent carcinogens, which is why cured meats containing sodium nitrite have drawn health concerns: Bacon and hot dogs contain nitrosamines.
They also appear in tobacco smoke, beer, and certain rubber products.
