nitrate
Bacon preservative compound
Nitrate is a chemical compound containing nitrogen and oxygen, used in fertilizers, explosives, and food preservation.
Sodium nitrate and potassium nitrate (saltpeter) are common forms.
Nitrates in soil feed plants; nitrates in processed meats prevent bacterial growth and maintain color.
As a verb, to nitrate is to treat with nitric acid: nitrated cellulose.
