Fried cornmeal bread
Johnnycake, also spelled johnny cake or jonny cake, is a flat cornmeal bread traditional to the American South and parts of New England.
The simple batter of cornmeal, water or milk, and salt is fried on a griddle or baked, producing a dense, slightly crisp cake.
Regional variations abound: Rhode Islanders insist on white cornmeal and a thin, lacy texture, while Southern versions tend toward thicker, more substantial cakes.
We had johnnycakes with butter and maple syrup for breakfast.
