ashcake

Ember-cooked cornbread

An ashcake is a simple cornmeal bread cooked directly in hot ashes or embers, without a pan.

The method was common in early American cooking, especially among enslaved people and frontier settlers who lacked proper cookware: She brushed the ashes off the ashcake and broke it in half.
