Broken cereal grain
Cracked wheat is whole wheat kernels that have been crushed or cut into smaller pieces.
It cooks faster than whole berries but retains the bran and germ, making it more nutritious than refined wheat.
Used in pilafs, salads, and cereals: She added cracked wheat to the soup for texture.
Not the same as bulgur, which is parboiled before cracking.
