neckbones
Pork soul food
Neckbones are the vertebrae from the neck of a pig or other animal, used in Southern and African American cooking.
They're braised or simmered slowly until the meat falls off the bone, often with greens, beans, or gravy: Grandma's neckbones and rice.
Like oxtails and ham hocks, neckbones are inexpensive cuts prized for their rich, gelatinous flavor.
