capocollo

Italian pork cold-cut

Capocollo is an Italian cured meat made from the muscle running from the neck to the shoulder of a pork.

It's dry-cured with salt, wine, and spices, then aged for several months.

The result is a marbled, tender cold cut with a rich, slightly spicy flavor.

Also spelled capicola or capicolla, and sometimes called gabagool in Italian-American speech.
