Chorizo is a highly seasoned pork sausage.
Spanish chorizo is cured and firm, colored deep red by smoked paprika, often sliced and eaten cold or added to cooked dishes.
Mexican chorizo is fresh and crumbly, typically removed from its casing and fried: Scrambled eggs with chorizo.
The two types aren't interchangeable in recipes.
