Pale Southern legumes
Butter beans are large, flat, cream-colored legumes with a rich, buttery texture when cooked.
The term is used interchangeably with lima beans in much of the United States, though in the South it often refers specifically to larger, mature limas rather than smaller green ones: She simmered butter beans with ham hocks.
