amylose

Unbranched glucose polymer

Amylose is one of two components of starch, the other being amylopectin.

It consists of long, unbranched chains of glucose molecules arranged in a helical structure.

Foods higher in amylose tend to be less sticky and digest more slowly than those with more amylopectin—long-grain rice has more amylose than short-grain, which is why sushi rice clumps better.
