amontillado

Oxidized dry sherry

Amontillado is a type of sherry—a fortified wine from Spain's Jerez region.

It begins as a fino sherry, then undergoes further aging that darkens its color and deepens its flavor to something nutty and dry.

The word is familiar to many from Edgar Allan Poe's story "The Cask of Amontillado," where a man is lured to his death with the promise of tasting a rare cask.
