Pedro Ximénez
Sweet Spanish varietal
Pedro Ximénez is a white grape variety used primarily in Spanish winemaking, especially for intensely sweet sherry.
The grapes are traditionally sun-dried to concentrate their sugars before pressing.
The resulting wine is dark, syrupy, and rich with flavors of raisins, figs, and molasses: a glass of Pedro Ximénez over vanilla ice cream.
Often abbreviated PX.
