Miso

Fermented bean paste

Miso is a fermented paste made from soybeans, salt, and a grain like rice or barley, fundamental to Japanese cuisine.

It has a salty, savory, umami-rich flavor that varies from mild and sweet (white miso) to strong and pungent (red miso).

Miso soup is the most familiar use in the West, but the paste seasons dressings, marinades, and glazes: The recipe calls for a tablespoon of white miso.
