white miso
Light soybean ferment
White miso is a Japanese fermented soybean paste with a mild, slightly sweet flavor.
It ferments for a shorter time than darker varieties and contains more rice, giving it a lighter color and gentler taste.
White miso works well in delicate preparations: white miso dressing, white miso soup with tofu.
Also called shiro miso.
