verjuice
Green grape liquid
Verjuice is the sour juice pressed from unripe grapes, crabapples, or other acidic fruit.
Before lemons became widely available in Europe, verjuice was the standard way to add tartness to sauces and dressings.
It remains a specialty ingredient in French and Middle Eastern cooking: The recipe calls for a splash of verjuice to brighten the dish.
