Imitation crab is a seafood product made from processed white fish, typically pollock, flavored and shaped to resemble crab meat.
Also called crab stick or surimi, it appears in sushi rolls, seafood salads, and anywhere real crab would be too expensive: The California roll is made with imitation crab.
It approximates crab's texture and mild sweetness at a fraction of the cost.
