transcriber
Converts speech to text
A transcriber is someone who converts speech or audio into written text.
The term covers anyone from court reporters producing verbatim legal records to workers typing up interviews or dictation.
In music, a transcriber notates performances or adapts compositions for different instruments: The transcriber arranged the symphony for piano.
The word also applies to software that performs speech-to-text conversion.
