trans fatty acid

Partially hydrogenated oil component

Trans fatty acid is an unsaturated fat whose molecular structure has been altered so that hydrogen atoms sit on opposite sides of a carbon double bond.

This configuration, rare in nature but common in partially hydrogenated oils, makes the fat more solid at room temperature.

Trans fats raise bad cholesterol while lowering good cholesterol, increasing heart disease risk.

Most countries now restrict or ban their use in food.
