tapster

One behind bars

A tapster is a person who draws and serves drinks from a tap, especially beer or ale in a tavern.

The term is old-fashioned, largely replaced by bartender or barkeep: The tapster filled another round of pints.

It survives mainly in historical fiction and period settings.
