Barrel's missing portion
Ullage is the amount by which a container falls short of being full—the empty space in a barrel, tank, or bottle.
Wine merchants track ullage to assess a bottle's condition, since significant ullage may indicate evaporation or a compromised cork: The ullage on this vintage is unusually high.
The term appears in brewing, winemaking, and fuel storage.
