tannic acid

Wine's puckering compound

Tannic acid is a plant-derived compound used in tanning leather, hence the name.

It belongs to a class of astringent substances called tannins, found in tea, wine, and tree bark.

The same compounds that tan animal hides also create the mouth-puckering sensation in strong tea or young red wine.
