pectin

Makes preserves set

Pectin is a substance found naturally in fruits that causes liquids to thicken and gel.

It's what makes jam and jelly set properly, and cooks often add commercial pectin to fruits that don't have enough of their own.

Apples and citrus fruits are particularly high in pectin, which is why apple cores and lemon peels are traditional thickeners for preserves.

This recipe calls for liquid pectin.
