Sour milk is milk that has begun to spoil, developing an acidic taste and unpleasant smell as bacteria convert lactose to lactic acid.
Unlike buttermilk or yogurt, which are intentionally cultured, sour milk results from age or improper storage.
Some recipes call for it as a leavening agent: The biscuits need sour milk to rise properly.
