wilted greens
Heat-softened leafy vegetables
Wilted greens are leafy vegetables that have been briefly cooked until they soften and reduce in volume, typically by sautéing or steaming: wilted greens with garlic and olive oil.
The term also describes salad greens dressed with warm vinaigrette, which slightly collapses them.
Unlike fully cooked greens, wilted greens retain some texture and bright color.
