skyr

Nordic strained dairy

Skyr is a thick, creamy dairy product from Iceland, similar to yogurt but technically a fresh cheese.

It has a mild, tangy flavor and high protein content: I topped my skyr with berries and granola.

Traditionally made with skimmed milk, skyr has become popular outside Iceland as a health food.
