pinon

Pesto nut source

Pinon (also piñon) is a small pine tree native to the southwestern United States and Mexico, prized for its edible seeds.

The seeds themselves, rich and buttery, are often called pinon nuts or pine nuts: We gathered pinon for roasting.

The tree's resinous wood burns with a distinctive fragrance, popular for fireplaces and outdoor fires in the Southwest.
