parboiled rice
Steam-treated grain kernels
Parboiled rice is rice that has been partially boiled in the husk before milling.
This process drives nutrients from the outer layers into the grain, making it more nutritious than regular white rice.
Parboiled rice also cooks up firmer and less sticky, holding its shape better in dishes like pilafs and fried rice: I prefer parboiled rice because the grains stay separate.
