notate

Write in symbols

To notate is to write something down in a specialized system of symbols or notation—most often music, but also dance, chess moves, or mathematical expressions.

She notated the melody she'd been humming all day.

The word is a back-formation from notation, used when ordinary writing won't capture what needs recording.
