middle lamella

Plant cell cement

The middle lamella is the thin layer of material that cements adjacent plant cells together.

Composed mainly of pectin, it forms during cell division and remains as the outermost layer of each cell wall.

When fruits ripen, enzymes break down the middle lamella, softening the tissue: The peach became mushy as its middle lamella degraded.
