marinading

Bathing in sauce

Marinading is the process of soaking food—typically meat, fish, or vegetables—in a seasoned liquid to infuse flavor or tenderize before cooking.

The liquid, called a marinade, usually contains an acid like vinegar or citrus juice along with oil and aromatics: I've been marinading the chicken overnight.

Also spelled marinating, which is more common.
