Cornichons are small pickled cucumbers, typically one to two inches long, prepared in the French style with tarragon and other aromatics.
They're tart and crunchy, served as a condiment alongside pâtés, charcuterie, and raclette: The board came with mustard and cornichons.
Similar to gherkins but usually more sour.
