clingstone

Pit-hugging peach variety

A clingstone is a variety of peach or other stone fruit whose flesh clings tightly to the pit, making it difficult to separate cleanly.

The opposite is a freestone, where the flesh releases easily.

Clingstones are often used for canning because their firmer texture holds up well during processing: clingstone peaches in heavy syrup.
