free-stone
Easy-release stone fruit
A freestone is a fruit whose flesh separates easily from the pit—peaches, plums, and cherries come in freestone and clingstone varieties: I only buy freestone peaches for canning.
The term also refers to stone that can be cut freely in any direction without splitting along natural grain lines, valued in masonry and sculpture.
