capon
Altered male chicken
A capon is a rooster that has been castrated young, producing tender, fatty meat prized in cooking.
The practice yields birds larger and more flavorful than ordinary roosters.
Capons were once common in European and American cuisine but have become less available as industrial chicken farming standardized around hens: We roasted a capon for Christmas dinner.
