cachaça

Caipirinha's main ingredient

Cachaça is a Brazilian spirit distilled from fermented sugarcane juice, similar to rum but with a grassier, more vegetal flavor.

It's the essential ingredient in caipirinhas, Brazil's national cocktail.

Unlike most rums, which are made from molasses, cachaça uses fresh-pressed cane: The bartender muddled lime and sugar before adding cachaça.
