Fish heads are the severed heads of fish, typically removed during cleaning and preparation.
In many Western contexts they're discarded as waste, but numerous cuisines prize them for soups, stews, and stocks because the head contains rich, gelatinous flesh and flavorful oils.
Fish head curry is a signature dish in Singapore.
The term also appears in the 1979 novelty song "Fish Heads" by Barnes & Barnes, which achieved cult status for its absurdist humor.
