shallow-frying
Cooking in oil
Shallow-frying is cooking food in a small amount of hot oil or fat in a pan, with the oil reaching partway up the food rather than covering it completely.
The food sits in the pan and is typically flipped to cook both sides: Shallow-frying the cutlets until golden.
It falls between sautéing (less oil, more movement) and deep-frying (food fully submerged).
